it would have to be like the log flume ride, where it would be a big big object that would have to have its own ground space and then have an entrance and exit programmed much like the shark tunnel
you wouldnt be able to put it going over your exhibits...

Although trams/skyrides/trains/monorails can't be done like in RCT, there are other ways to make them for ZT besides as a big, prebuilt object. These other ways involve illusions. One way is to have track sections and tunnel sections that can be placed next to each other. From ZT's perspective, the track sections would actually be buildings where the "idle" graphics look like an empty track and the "used" graphics look like a moving vehicle from one end to the other. Between each pair of track sections, there would be tunnel sections. From ZT's perspective, the tunnel sections would actually be arches. So ZT would think a guest is entering a building, leaving it at a different spot into an arch, then entering the next building, and continuing to the end. But to us Zoo Tycooners, it would look like a vehicle is moving from one tunnel to the next and continuing to the end.
And these things could go over exhibits. Again, it would be an illusion similar to the "roof" of the aviary cage, where the graphics are bigger than the footprint.
If this is for decoration instead of guest use, it is also possible to make zoo scenery (from ZT's perspective). The scenery would have animated graphics that makes it look like a vehicle is moving out of a tunnel at one end, over the track, and into a tunnel at the other end. These objects could be laid end to end to extend them, even "around" the zoo. However, to go around the zoo, there would also have to be arches that look like train tunnels. Otherwise the guests wouldn't be able to get inside the track to see the exhibits.
For trams or cars, another possibility is to change the tour guide graphics to a vehicle or to add new guest graphics that look like a vehicle.

A flying helicopter could also be done via one of the methods I mentioned for other vehicles. But it could be done via two other methods as well. It could be made similar to the Space Needle. But, instead of a chamber moving up and down with guests, a helicopter could fly straight up and down with guests, possibly even making a small circle at its greatest height. The other method is to add another ambient flying object like the birds, Microsoft plane, witch, and Santa sleigh. But it would only fly over the zoo using this last method. Guests could not enter it.
However, any of the methods would need a person who is good at creating new animations. Unfortunately, I do not have that ability.
