I'm not sure about The Mango Joes Cafe, but I like the idea of a sit-down restaurant selling fajitas, churros, soda, and either taco salad or a Mexican chicken salad (if I can remember the name of that). That would be perfect for a cantina. I'll see if Devona can find time to make those food icons.

Devona has graciously made icons for taco salads, fajitas, and churros. Are there any specific guest thoughts or food descriptions you would like to go with each of them?
I haven't decided yet if this will be a stand or a sit-down building. (We have some images for both, but both are general in nature instead of looking Mexican.) If a stand is used, there would be a guest thought to go with it (since the food would be eaten at benches and tables). If so, is there any specific guest thought you would like to go with the stand?

I don't know how difficult it would be, but you could take some of the graphics off the Prairie Dog Cafe and convert them into a stand somehow. That might be an option if you can't really find new graphics.
But that is a great idea. Good suggestion, Dragon Guy.

A churro is a long, slender, deep-fried pastry resembling a cruller. I have seen churros being sold as snacks in some theme parks and some malls.
As for a name, I'm currently leaning toward "Cantina de Devona".
